Before using this product, your equipment must be very clean.  Sodium Metabisulphite is used to sanitize wine and beer equipment before you start any wine or beer making project.  Simply dissolve ¼ teaspoon of sulphite crystals in 4 or 5 L of water.  Sterilization is achieved by shaking your containers with this solution in such a way as to allow the solution to completely bathe the interior walls.  DO NOT RE-RINSE WITH WATER!  Please note, this product should not be used as preservative, only for sterilizing purposes.
